One of the places I eat grinds their own burger meat (or has a local butcher do it) so they can get EXACTLY the grind they want, EXACTLY the mix of lean and fat… and sometimes EXACTLY the mix of two or three meats (venison & pork is one). The surprising thing to me is that the burgers (which are Grrrreat!) aren’t much more expensive than a burger from a bar-n-grill.
