    Usually, when speed records are set, they will do multiple passes in different directions and average the speed. This compensates for things like wind direction, slope, air temperature, etc.

    So if a vehicle goes 200 mph in one direction turns around and goes 220 miles an hour in the other direction, they will say they have an average speed of 210 mph.
