Came here for Breaking Cat News, but have found some other great comics—sweet ones like Snow Sez, Cul de Sac, Cat's Cafe and Ten Cats and ones a "little off center" like Last Kiss, Lio and Spirit of the Staircase. Was COVID-laid off in March 2020 and now "enjoying" retirement.

    Cocoa Oatmeal Cookies

    1 1/4 c All-purpose flour

    1/2 tsp Baking powder

    1/2 tsp Salt

    1/3 c Cocoa

    1 1/4 c Sugar

    1 Egg (well-beaten)

    1/2 c Milk

    1 1/2 tsp Vanilla

    1/3 c Shortening (melted)

    1/3 c Butter (melted)

    2 c Rolled oats

    Sift flour, measure; resift twice with baking powder, salt, cocoa and sugar.

    Combine beaten egg, milk and vanilla; add melted shortening and butter.

    Mix thoroughly with sifted dry ingredients. Stir in rolled oats.

    Drop by teaspoonfuls onto buttered cookie sheet. Bake in moderate over (350F) 15–20 minutes. Remove to cooling racks.

    Makes 5 dozen cookies.

    (Mother often made these ahead of time; she’d layer the baked cookies between sheets of waxed paper in a tin and put that in the freezer for me to take back to the D/FW Metroplex after a visit home.)

    I hope Bella kicks this soonest! I, too, had chest congestion and rhinitis that started a week into December and lasted well into January; it was miserable. My nose was so exfoliated (even using Puffs with Lotion!) that it’s 20 years younger than the rest of my face.

    Maureen Abood has a recipe for Bread and Butter Sweet Pickle Chips—no food coloring, but the cucumber slices stay bright green; best of all, NO cooking at all—just cover the cucumber and sweet onion slices with the sugar/vinegar and refrigerate for two days before eating (will keep several weeks in fridge).

    Thank you! Hubby and I love tomatoes. I’ve saved a number of recipes from YouTube videos for “tomato pudding,” which seems to be the same dish although yours has basil instead of the cinnamon the others often have.

    We actually have quite a few of Mother’s recipes especially the cookies, cakes and sweet treats she made for Christmas. But I would give a lot to have some of Mother’s chili and rice again. Mother was Puerto Rican, but the chili did not have beans!

    Just watched a YouTube video today by Kevin of Cavalcade of Food where he mixed up a “cake mix upsizer” concoction that he stores in the cupboard and adds to any boxed cake mixes that have downsized from 18.5 ozs.—you add six tablespoons of this dry mix to 15.25 oz. boxed cake mixes (eight tablespoons to 13.25 oz. mixes) so that you get as tall a cake, or as many layers of a cake as you used to.

    Tammy of Collard Valley Cooks has a YouTube video, “Homemade Eggnog – Pound Cake from Scratch – Making Our Own Eggnog,” where she makes a cooked eggnog—the yellows are cooked by adding the heated milk/cream to them slowly and the whites are folded in to the entire mixture as it is brought back up to temp on the stovetop. The eggnog making is the first half of the video.
