Maybe too little or too much moisture? My nails will sometimes do the same if they’re too dry. I use bio oil on my hands and nails and it tends to help.
The right cut, right marinade and dehydrator makes fantastic jerky. I make a good two pounds every few weeks. The wrong person with the wrong everything however does not make good jerky. Not easy, but not impossible.
