In modern breeds of sheep which have a lot of wool around the hind-quarters, including the tail, there’s a risk of dung getting into the tail-wool and leading to fly-strike, so their tails are cut short so they are light and neat enough for the sheep to lift them up high when defecating. But a fully sentient sheep who wears clothes and wins spelling bees would just use a bidet, or shave the underside of her tail with a lady razor, so there’s no reason why she should have been docked.
